The interviewers were really nice and processed my application with little hassle. I had to get one additional tax document and bring it back the next day, and then all was done!

I got to the Johannesburg American Consulate at 12:30 for the 1pm appointment. Waited outside til they let us in one by one, dropped of my cell phone and medical sealed envelope at the security check, then proceeded to the main area to wait.
It took very quickly- there was hardly anyone there and everyone was very efficient and friendly.
I was called up to a window to give my fingerprints and 2 x colour U.S passport size photos. The lady at that window asked me some detailed questions about my relationship with my husband, where we met, how long , what we both did for work, etc. She asked my for a copy of the Affadavit of Support which I had, and all his tax transcripts which I did not have. I told her they should have this as he had sent them to the NVC and they had approved that part of our application. She seemed ok with this.

Before the Interview:
We ended up having to call the consulate and have them re-send Packet 3 by email. When my fiancé called, they claimed that they had sent it a couple weeks before but we never received it and checked both our spam and regular inbox several times a day. So it might be important to call the consulate if you still haven't received anything via email a couple of weeks after the NVC has sent the documentation to the consulate.
It is also important to send the 'Notification of Applicant Readiness' with the 'DS-230 Part 1' back to the Consulate after they send you Packet 3 in order for you to get a Visa Appointment Letter. My fiancé had called to ask which documents he was supposed to send and was instructed to only send the "DS-230 Part 1"; however, he ended up sending both, which was what was actually needed to obtain an interview date.

My fiance just called me from Johannesburg to give me the play by play of his K1 interview this afternoon. Below is a synopsis of the day. I made this as detailed as possible, in case the information was of help to anyone else going through this process.
A few hours before the interview, he stopped by the doctor's office to pick up his medical report. He was given the packet for consulate, as well as a personal copy of DS-3025, Vaccination Documentation Worksheet. I do not know if they provide copies to everyone, as we had specifically requested to receive a copy for ourselves. [And while not directly related to a "consulate review", I must say the staff at the office of Dr. Hugh Boss, and the doctor himself, are warm, extremely helpful, and very accommodating. We had called in advance to find out what paperwork we needed to bring.
