My fiancée had her interview yesterday and was approved! Here is her experience:
“When I arrived at the embassy, I saw a few people, about five, waiting to go in. A woman approached us, asking for our passports and photos, and confirmed whether the photos had been taken within the last six months.
A guard then opened the door, and I went through security. I placed all my belongings into a tray and turned off my phone. After my belongings were scanned, I collected my documents, while my phone and watch were placed in a locker. I received a key to retrieve them after the interview, which I wore around my neck. I was then directed to the part of the building where the interviews take place.
Inside, a guard on the left asked what I was there for. I told him it was for a K-1 visa, and he directed me to the right. I waited in line behind two men who were also dressed smartly, unlike some others who didn't put much effort into their appearance. ... read complete review

An easy interview. Very few questions asked. How you met your spouse, what they did for work, what they’d do in the US, how you know your financial sponsor. Approved on the spot pending medical exam.

Great experience at the Embassy in Dublin. This will be quite throughout of a review as I relied on these pre-interview to ease my nerves so I'm trying to pay it forward. TL:DR at the end.
Interview was at 8am, arrived 7:50am and went through security without issues. Note that you can't have any electronic devices on you (phone, laptop, headphones etc) and it includes smart watches and airtags. I had a mechanical watch and they were fine with it as well as a tote bag full of my documents. Other folks inside had handbags/backpacks. Locker for your electronics at security is big enough to fit your phone and that's it. Attire on most folks was smart-casual.
Room where you have your interview is quite small and there's only a couple of chairs so be prepared to stand for a couple of hours if needs be.
