I ended up arriving at the consulate about 1h before and was told they would only start admitting us 30’ before the scheduled time. There were 2 security checks before getting into the building.
Once in, I was asked to show my DS260 confirmation and take out my police certificates. She put a sticker on the back of my passport and directed me to a window where a woman was reviewing documents before the actual interview. There were 3 people ahead of me, which took c.45’.
At the window, the lady only took my original police and marriage certificates, as well as my long form birth certificate and translation. She then asked for a picture and the printout of my appointment registration.
The wait before the actual interview was short, the officer asked whether I wanted to continue in French or English and asked me to raise my hand and swear to tell the truth.

My husband had a good experience in Paris in the beginning of March. His interview was at 10:15, and my husband showed up to the Embassy around 9 am. There were five or so people in front of him. A US official called in people who were waiting for notarial or passport services until about 9:30, then visa appointments started being admitted. It was not very crowded at all, and he did say one spouse was asked to wait outside while her husband had his interview (it was unclear if she was American or not, but assuming this is a Covid precaution).
After going through security, my husband first met with a desk official/agent who checked that he had brought the correct documentation for the interview. They did check to make sure he had translations (even though as a citizen of France they were not required to be submitted with the DS260). He was then ushered to another officer, and then finally a third person, the consular officer who conducted the interview.

Very smooth experience.
I went there 30min before, passed security and entered the embassy building. Then a person helps you prepare the documents you need for the first booth.
First booth:
they recheck your identity and the documents (DS160, photo, police certificate, birth certificate, letter of intent of marry, medical case and proof of payment for your interview), and prepare your case folder that the officer will later review. Also there's a finger scan. Then you sit down.
Second booth:
They call your name, you go to the booth (it's not an interview room but a simple booth), they ask you if you wanna do it in English, I said yes. Most (if not all) people before me did it in French. Our experience with direct consular filing was great at the Paris Embassy, efficient, quick turnaround time, some of the consular officers were very kind and friendly. Interview was not difficult and you did not feel like the officers were giving you an unnecessarily hard time in regards to documentation. But of course bring everything with you, etc.
