Actually there are several things wrong with that cover letter. Documents included that don't need to be included. There is no such thing as an I-693A anymore. You also only need the NOA2 from the K1, not the NOA1.

Why are you repeating some of the items under each form, such as I-94 and passport photos? We only need one copy of them, correct? I'm about to mail the AOS package now and don't want to do something wrong by only providing two passport photos and one copy of everything else.

INCORRECT. If you are submitting an EAD and AP form then you need copies of forms for those documents, just like the instructions for those documents state. The packet is separated and they are all processed separately. If you are filing AOS, EAD and AP you need SIX photos and of course each form needs its supporting documents separately, not grouped with the AOS stuff.

Egads, this is awful..... that means we have a whole lot more stuff to do. Well, I guess it is better to find out now rather than later....

But I can at least put the duplicates in the same envelope, right? Maybe I should have 4 envelopes with the different forms and their docs, and then put them all in an even larger 1 inch thick envelope/box?

You can just use large paperclips to group the 3 forms and their needed documents together, then stack them and put your cover letter and check on top and mail them together in one envelope.

Yep. You group all the AOS (I-485 + I-864) stuff together, then the EAD (I-765) stuff together, then the AP (1-131) stuff together and put it all in one envelope. Whether that's 4 different envelopes into one big one or binder clips separating (what I did) is up to you.

thanks for the info., SisJ..... on the I-864 part, would it be suffice to send copies of my previous 3-year tax returns only and nothing else like bank statements and pay stubs?

If your husband is self-employed, he will only need his most recent tax return to prove his income. If he is an employee, then he should send a letter from his employer and/or most recent pay stub(s) to prove his current annual income.

If you had all the required vaccinations at the time of your medical and they were marked off on your DS-3025, then you do not need to see a civil surgeon for an I-693.
