Hello! Texas is just a sorting facility -- they will really route I-129F petitions to either VSC or CSC, depending on which service center can accomodate petitions. :)

Yup, click on "Example Forms" at the top of the page there are samples in there. We used this format. You don't need to specify any dates (ie wedding date), just that you intend to marry your fiance/fiancee when he/she gets the K1 Visa. :)
