it would be super interesting to see how long the process goes after USCIS, NVC, and finally to the Belgrade embassy.

Count on that. If I remember correctly there's usually 2-3 K1s issued in Belgrade per month. I'll do my best not to forget, despite the excitement. I'll be happy to share anything that might help you. If anything, we're lucky to have an embassy that is not backlogged.
