I can't update the NOA1 date on my timeline, because visajourney returns an error saying that the date over the 8 week max limit. But that's really how long NOA1 takes to receive now (~2.5 months)

I'm guessing you mean the AOS RFE? It was for the I-864 (Affidavit of Support). I'm not sure which exact part they thought was missing because they listed several items, most of which I'm certain were in included. The only part that I think might have been missing were the supporting tax documents, because I originally didn't include some of the forms with my complete W2, such as the Form 2555. My lawyer looked over everything and said it looked fine, and perhaps something was misplaced or not signed, and that even if it were missing the Form 2555, the W2 should have been enough. That's all I could think of though. The exact wording from the RFE is below, hope this helps:
We are unable to process the I-864 because it has one or more deficiencies. In order for us to process your
application further, you must:
- Submit a completed and signed Form I-864, Affidavit of Support, from the petitioning sponsor. All
pages must be present and of the latest edition date.
- Provide the petitioning sponsor's Social Security Number on Form I-864.
- Provide a complete and correctly calculated household size for the petitioning sponsor on Form I-864.
- Submit a complete copy of the petitioning sponsor’s Federal income tax return, including all supporting
tax documents (W-2s, 1099s, Form 2555, and tax schedules) filed with the return, for the most recent tax
year.

That really does help for when I submit for the AOS, we didn't go through a lawyer and I really want to make sure everything (or even more than everything) is in there. Thanks for the added info about the exact wording from the RFE.

The I-129f RFE was for proof of US citizenship. I originally included my (the sponsor's) birth certificate, but didn't realize that it needs to be the long form birth certificate in order to be proof of US citizenship. I send a photocopy of my passport instead, and that worked.
