If I received an email from NVC stating that my documents where accepted and approved and that they will work with the Embassy to schedule the interview, does that mean that my case is considered complete, and just waiting for interview??

yes, that is correct. please let us know when you are going to be scheduled for the interview as it helps people to have a better understanding of timing. and there is especially little info on Ukraine. We are in Ukrainians consulate too, so I`ll follow your timeline . good luck !
