I filed for AOS in SF as well, back in June 2020. My case has been ready to be scheduled for an interview since December 2020. I have called them numerous times and they keep saying my documents are fine, they have been trying to find an empty slot for me to take my interview.
Have you done anything to have your interview scheduled? I'm so worried I am forgetting something.

I'm sorry that you're still waiting for the interview. As far as I remember, I didn't really have to do anything to have the interview scheduled. In my case, I just submitted the request for the I-485 (together with the EAD and AP) in June 2020, received the invite for the biometrics appt in August 2020, and received, one year later, the invite for the GC interview in August 2021. To be fair, it's moved faster than I expected, so your timeline doesn't seem insanely delayed, I'd say.
What do you mean with "ready to be schedule since Dec 2020"?
