Use a phone app like "Whatsapp" to communicate between each other. Be sure to take plenty of pictures each time you are together and be sure to exchange those pictures via the app. This way, when it is time to create your proof of relationship document, all the messages, pictures, phone calls, etc... are automatically documented within the app - with timestamps embedded in the filename.
Documents and emails that you exchange outside of the app will need to be timestamped too. Be sure set a format for all files created so they cannot be confused... and to make downloads from all the apps or tools you use weekly.
Do not try to document all conversations in the proof document but do list all the files created in the document, and then attach random selections of those files, maybe two of each type a month. This will not create too big a document, but one that is detailed enough.

Download and fill all the forms you can via a paint program editing the PDF file. I say this because the PDFs are never completely fillable while on the internet, there are always errors within that prevent you from completing some critical line. Once you have filled the form, both of you and maybe a friend or two should review it as many times as possible over as many days as possible before it is submitted. Some mistakes will be simple typos, some will be miss-formatted dates (European vs. US vs. Asian formats). It is better to delay filling the form if you can spend more days reviewing it.
