I understand the stress! First thing you should know is the estimated date for approval that Visa Journey sends you is accurate, mine was precise to the DAY! Visa Journey sent me an updated estimated approval date about once a week, usually saying it would be approved sooner than the previous estimate they sent. Here is my elaborated timeline with the dates things happened:
I sent the I-129F to the Texas location on 3/23/2019, who then sent it to the California location, I don’t know when the California location received it. I received my NOA 1 on 3/26 saying they received it and provided the WAC receipt #. I then checked this link:
https://egov.uscis.gov/casestatus/landing.do
About 3 months later I got a the NOA 2 in the mail saying it was approved (the link above confirmed this). After that I waited for 30 days before calling the National Visa Center to see if they received my application and have generated my case #. I had to call a few times to get through to a real person and they were very helpful and quick to provide me with the case #. They then said the paperwork would be sent to the Rio consulate for the next steps. Using the case # they told me I used the following link to check the status:

A week or so later the consulate received the documents and e-mailed my fiancée to begin the DS-160. She spent the next month filling it out and saving up the money for the fee. She then paid the fee and scheduled the interview.
