We finally got our NVC case number, not yet sent to the embassy. but am I Ok to start scheduling my medical and completing the DS-160 or do i need to wait on the NVC email? When and how did you schedule you interview?

Hello,
I did wait that my case was received by the embassy to schedule my medical. You can also do it as soon as it is sent by NVC.
Cases are sent from NVC to embassy every two weeks. Yours should be sent by the end of the month or mid july at the latest.
When your case is sent by NVC to embassy your american fiance will receive an email to confirm it was transferred.
Keep this email as you will need it for your medical.
I received almost a month later the same email in the post. But some people never receive anything in the mail..so keep the NVC email from your fiance for sure!
You can fill you DS160 right away but I would wait the email from NVC to take your medical.
Once you have your medical schedule, you can also book your interview using this website:

Make sure you have 5 working days in between your appointments minimum.
