The Dublin embassy in Ireland was pretty good, an easy process overall. The only thing was the security didn't let my fiance in with me to the interview - they said interviewees only. They don't allow phones inside, but have lockers to keep them at security.
I came early, before my appointment time (12:45pm) and so had to wait in a line of visa applicants outside security, I came seriously overprepared -the other four K1 applicants only brought small folders with them. The Irish lady inside the embassy collecting documents also said as much, that I came with way too many papers. She asked me only for the I-134 Affidavit of Support, petitioner's federal tax and proof of income, the Interview confirmation letter and the DS160, and PCC from all the countries where I lived/visited for more than 6 months.
They didn't ask for any proof of relationship, or other documents.
After that she told me that I would speak with a Consular when called, and that I could go back and sit again to wait. I was waiting just about 25 min, and I saw two other K1 pass their interview before me, and I was able to hear everything. Both of them were approved. Then my name was called, and I picked up my big bundle of documents and headed over to speak with an American man at window 1. He smiled at me as I approached, and he also cracked a joke at how big my folder was. The first thing he asked was 'Tell me about your fiancee'. As I explained he asked 'So how did you meet?'. Then he just repeated with me that 'Oh so after 5 months you started living together?' I said 'yes'. Then he said 'Everything looks perfect, but I need your missing PCC'. (Despite all my preparation, I was actually missing one of my PCCs lol) . Then he said that once he got that I would get my visa within two weeks, and he gave me the 221g with the box ticked for just the PCC.
I finally got my PCC in the mail two days later, and I posted it back the same day in priority post to the embassy. Then I got my visa in the post on 25th September with DPD home delivery.
DPD did not update the status of the package on their website until the same day of delivery. The status went from 'No Status' to 'Application Received on the 18th September, and in only a couple of hours it changed again to 'Administrative Processing'. Then it changed on the 19th to 'Ready', and finally changed on the 20th to 'Issued'
I got a confirmation email that DPD picked it up on 22nd Sept, and they delivered to my door on the 25th.
My fiancee and I flew from Dublin to Chicago, and I passed through preclearance for both immigration and customs in Dublin airport before getting on the flight. After passing the Irish security, we had to go through another US security check for customs. Then we went together to a line to check immigration. The American lady there was very friendly and chatty. She checked our passports and K1 packet (she kept my passport and the K1 packet), she took my fingerprints (right hand only) and brought us to a large room to wait. After about 15 min my surname was called by an American officer at the desk. He was friendly and laughing, and asked my fiancee to come to the desk as well to show her passport and boarding pass as well. He asked her what her occupation was, and what did I plan to work as. He asked what address we were going to stay in the US, and how long we knew each other. Then he stamped and signed my visa and instructed us that we needed to get married withing 90 days, and that if I leave before getting AP then I won't be able to reenter the US. They never asked us to identify our baggage like we heard from others. We saw one guy whose checked bags were brought for inspection, but I don't know what his visa type was.
So we got on the flight and entered Chicago as a domestic flight, we didn't have go through customs or immigration on arrival.
Just a side note- I'd recommend to change euros to dollars at Dublin airport as the currency exchange there gave a much better rate than the one in Chicago ORD.
