It was an overall very pleasant experience. My appointment was at 10 and I was there at 9:45, thinking it would be a good thing to be there a bit early. Don't do that! We all had to wait until 10 to go in. A few other people were waiting for a K1 interview as well.
They let us in at 10, went through security and they took my bag and my phone (you have to turn it off) and gave me a number. At the first counter they confirmed some info like my name, birth date, asked me for my email and asked about my fiancé's phone number and asked me to confirm where he's from. Then they took my documents and fingerprints. For affidavit they only took the form even though I had a bunch of other stuff with me.
Then I sat down waiting to be called again, which happened in maybe 10 minutes. I was interviewed by a very nice lady who asked me some very basic questions about our relationship - how did we meet, when did we start dating, when did we get engaged, what does he do, his birthplace, what do I do, what is the one thing I like about him the best, etc. Nothing too complicated. She told me that she will approve the visa and that I will get my passport back in a few days. I asked if she needed to cancel my B2 visa and she did, lol. Also, of all the additional relationship proof, they just took a photo album I prepared.
