We spent almost four (!!) months gathering our AOS and IV documents because we had tax issues and sponsor issues. My dad is our joint sponsor and he's self employed so we had to get that straightened out. For our AOS forms (the old I-864), I wrote N/A on sections that were not applicable to us so as to avoid confusion/checklists per NVC reps.
When I sent out my application, I put my father's financial evidence in one folder along with mine and the NVC checklist cover sheet. I put my husband's evidence in a separate folder with a cover sheet I printed off the CEAC website. I sent both off these folders as ONE package to NVC.
Scan date 8/31/15. Scan date email received 9/3/15.
