Our AOS interview was pretty quick...about 10 minutes max. Maybe it was that fast since we had our 2 year old destroying the office! We didn't bring much evidence in, with the exception of our taxes and some bills...we figured that two kids would be pretty good evidence. I wish we had brought more, but the interviewer seemed satisfied. Got our green card less then 2 weeks after the interview!
