The consulate officer didn't ask for any evidence of our relationship (and I had several inches of paperwork documenting it). He just looked through the I-129-F file and the paperwork they'd specifically asked for and commented on / asked about a few things: where I'm moving to (he knew a city in the area), one of the photos of my fiance and me submitted with the I-129F (he asked where it was taken), and a couple of questions/comments about how my fiance and I met and the work we do. He also asked if my fiance has any dependants, but it was all very conversational. I think he was checking to see how easily I was able to talk about the details when he drew attention to them.
Then he finished with "Everything appears to be in order" and asked if I wanted to pick up the package the next day at 2:30 or have it mailed to me.
