You may be wondering why we waited a year to do the Interview. It's a long-short story in that the first time we went, the consulate took the whole week off for Thanksgiving. Luckily though, a year later we did get around to making a second consulate attempt. The interview went pretty well. My fiancee got her visa. javascript:emoticon('') She was quized on my parents and sibling's names, and how we first met. So that much was pretty simple. As everyone complains, the worst part is the waiting. My fiancee said that most of the people interviewing received visas. I think what earned us the visa, was that my fiance had never entered the US illegally. That and we had two financial sponsors (myself and my mom). I also loaded up my fiance's visa portfolio with vacation photos from our trip to, plane tickets, and other things. Whether they looked at it all, I can't say for sure.
Also, if you're the US fiance and don't look Mexican, be sure to take $500 extra dollars for taxis. The 'gringo' taxi rate is 3.5 times that of the local rate. For example, expect to get quoted $50-$70 for a taxi ride to the airport. Then, expect to watch you're Mexican fiancee to get quoted $20 for the same taxi.
Also, the hotels are and have been completely booked for the last couple weeks. So reserve your hotel over the phone or online well in advance.
