What?! An expiration date!?

My fiancé and I didn't realize (we overlooked it) there was an expiration date on the approval notice. Yes, we know, it was a dumb mistake. We thought we had plenty of time. My fiancé wanted to get his passport and schedule for the interview once he was financially ready. He was ready to proceed with the interview process a few days before Thanksgiving Day. Our Notice of Approval of the K-1 Visa expired on November 17th.

After making several phone calls and emails, we finally were directed to send a request for an extension of the approval to support@ustraveldocs.com. In turn, they turn in our case to the US Consulate in Guatemala. They advised us to check our email and our account on the ustraveldocs.com/gt.

We have been waiting for almost two months and have received no reply from the consulate. I have emailed and called the embassy support several times and they all tell me to wait and that they are not able to give me an estimate of how much time it will take.

We do understand it was our mistake, but does anyone know:
1. how long it usually takes the US Consulate in Guatemala to respond to an extension request? Our large wedding is set for May 16, 2014. We will need to postpone if we don't get an answer soon
2. Will he/she most likely say yes to the extension?
3. What do you suggest that we have ready or already done in case the extension is granted?
