My fiance was interviewed in English since that's how we communicate. She says that the consulate officer she interviewed with spoke clearly and was smiling the whole time. Overall a very good experience, some of the questions she was asked included -
How long have you known your fiance? How did you meet your fiance? How far does your fiance live from his parents? Does your fiance have any siblings? What does your fiance do for work?
They mostly asked questions to test her knowledge of me and my life. We had our evidence well prepared but they didn't look at it. There was a pink slip already with our paperwork that the consulate officer had. My fiance saw that and it made her feel more at ease, like they'd reviewed our file and they were already leaning towards an approval.

My Fiancé passed her K1 interview at the U.S. Embassy and Consulate in Ho Chi Minh City, Vietnam an hour ago!
Here are the questions she was asked:
How did we meet?
How many times did we meet?
What are your fiancé's hobbies?
What things does your fiancée dislike about his work?
What is his job? How is his day? Describe his job?
What is his address?
What do we typically argue about?
When was the last time we argued, and about what?
How did he propose you? Time and date?
Will your parents attend you wedding in the U.S.? Where do you plan to get married?
They also asked "after 2 months your fiancée proposed?" She answered "yes, but it was more of a promise to try our best to stay together in long distance relationship."

Took 3 hours to have a 5 minute interview. Everything was great. If you are bona fide, you should do well.

Her appointment time was at 7:30 AM on a Monday. She arrived at 7:00 AM and no one was queuing. It seemed everyone was hanging out at a nearby cafe that had stool seats outside. At 7:20 AM, people were allowed to queue at the consulate. She ended up behind 50 people since she went to another cafe for quick breakfast. But it didn't seem to matter since people were being called up to windows seemingly randomly.
First she had to get a "pre-interview" with one of the Vietnamese speaking staff, who checked if she had some of her original documents that she was required to bring like household registration, passport, police certificate, birth certificates, etc.
She said that there were several people who looked sad after leaving the windows, and she saw some folks get blue slips.
