The experience of the wait is pretty much similar to others.
The two advice:
1. To get to the Consulate early despite the appointment letter stated shouldn't show up 10 min earlier than schedule time. It doesn't matter! You will cut off the wait time.
My schedule was at 745 AM -> got to Consulate at 720 AM -> I got number 21-> actual interview was around 945 AM -> Got out at 950 AM.
2. Be well prepared - even if you probably wont need the evidences.
The questions CO asked me:
Q: "Is he your fiance?" <-- pointed at my fiance
A: "Yes"
Q: "What's your name?" <-- directed to my fiance
A: "his name"
CO told my fiance to have a seat.
Q: "How long had you studied in the US? What University? What major? When did you go back?"
A: I answered thoroughly
Q: What do you do since then?
A: my current job
Q: How do you know your fiance?
A: same group of friends

I had read many reviews of the IV interview process at the US Consulate on this website and others, so we kind of had an idea of what to expect going in. Basically, it isn't that bad if you are well-prepared. Also, the US Consulate in Saigon is overwhelmed with US visa applications of all kinds, so they are really bad at communicating.
I received a notice of our interview and the scheduled date on June 13 from the NVC. The consulate never made any attempt to contact me. I reached out to them (they limit inquiries to 500 characters which is frustrating), and then they finally replied with a formal letter and interview notice. I made another attempt to contact the consulate to confirm that they received all of our documents from the NVC, but they refused to confirm or deny whether or not they had received anything. This review outlines our experience from our case complete through our interview with the United States Consulate in Ho Chi Minh City, Vietnam.
Following the submission of our documents to NVC we requested an expedite. Our expedite request was based upon the desire of my wife to visit an elderly, ill relative of mine in the United States who was celebrating an important birthday. Included with our request were a physician’s letter and photographs The expedite request was submitted to the consulate in Ho Chi Minh City. Several days after submitting the request they agreed that they would expedite our case for the interview after our case was completed by NVC.

The first interview the Visa was denied, they asked for my family tree. Name, phone number and address of my grandparents, my parents, aunts, uncles and siblings. After she submitted the documents she got approved for the visa
