Entire interview lasted all of 30 minutes from entering the visitor center to exiting. Entire consulate center was nearly empty due to COVID. Before the interview, there was a place to disinfect your hands. FSO was very amicable, spoke both Ukrainian and English, laughed at any jokes, and enjoyed our story. The FSO kept the medical, the police report, our passports, photographs, and the Affidavit of Support and tax returns.
Protip: crop your photos before going to the interview and write your names on the back of them (as per the instructions) to earn bonus points with the FSO. Apparently, very few people actually do it and then have to take up interview time cropping it before submitting them to the FSO.

My interview at the Ukrainian embassy was a very nice and positive experience. I had my appointment at 8 am, we arrived in time. There were some other people waiting with us, but not many. Make sure you know where to keep your possessions. Many people mentioned there were using paid locking boxes in front of the embassy. On that day I did not see any of those. We were allowed to bring inside documents only.
At the entrance security guard asked me for my passport and our son's passport (we were interviewed together). They let us in and we went through gates ( very much like at the airport). Then we went to another building where security guards asked me for passport delivery confirmation. We were assigned a number and in a few minutes we were asked to go to the window #10. The lady there took my biometrics, asked for originals, one passport picture, and proof of relationship (take as much as you can). My wife had her interview on the 10th of November. They didn't ask for any of her documents except our proof of being together, which they briefly glanced over and handed back. They told us that we were missing the i-864a on the online portal so they issued us a 221g. However 2 days later they have issued our visa. The administrative process was less than 2 days.
They asked my wife
"are your husband's parents still married"
"how did you meet"
"did your husband live abroad"
"how old is your husband and what does he do for work"
"how long are you together for"
Overall a good experience. I also applied for my newborn's passport which was an extremely fast process and everybody was very helpful. Not sure how the embassy could be better than this.
