The interview was August 2nd, 2021. To preface: we didn't realize we would need 3 police-related certificates from Peru: Policiales, Judiciales, and Penales. We only sent Penales in Packet 3, so we needed to get the other two. We got Judiciales online, the Embassy approved it via e-mail, and are still in the process of getting Policiales.
Everyone at the Embassy was so nice! The administrative woman asked for these forms: 1. The appointment booking, 2. Proof of fee payment, 3. Medical docs, 4. His passport, and 5. A print-out of the aforementioned Judiciales. She then told us the Policiales doesn't need to be apostilled and that it can be mailed directly from Peru to the Embassy.

The interview was great! Officer was kind and we even laugh at some point! The embassy is very organized and the only drawback was that it was a busy day and it took me 2 hours but everything was good.

Whole process took about 1.5 hours. Mainly because we got there early and got stuck behind a family that had 2 very rowdy children.
Everyone was courteous and nice. Wife was just asked two questions. Very easy!

Fantastic! My fiance reported that it was super easy. They asked him about his professional plans in the United States. Did not look at any of the photos he brought or letters.
But! Please note - they asked us to submit renewed copies of his criminal record reports because they were more than 6 months old. We were able to get them that same day online, and I had to have his french report translated - but we got it all within 24 hours to them over email.
They also asked me to resubmit my letter of intention to marry him, as the plans we had laid out to get married in our initial letter have clearly been derailed by COVID. I assume they are asking everyone currently processing to do this because of similar delays and expiration of plans.
I'd recommend ensuring that your criminal records are less than 6 months old before submitting them with your DS160 paperwork.
