My interview was at 3pm. Was supposed to be last week at the same time but was rescheduled.
The first officer asked for my police certificate and passport and took a scan. Also gave me some pamphlet to read.
Then I had to wait for a while for the consular officer (C.O) interview.
The C.O was a nice sweet lady that had refused me a B1 visa a year ago when I wanted to visit my girlfriend (at that time we were dating). She immediately recognised me and we exchanged and we conversed very nicely.
I took the oath and scanned my fingerprints. Then we started.
1. What does she do?
2. How did you meet each other?
3. First time we saw each other.
4. How many visits.
5. Have any of us been married
6. Where did we get married
7. Show pictures
8. Who was at the wedding

It went very well and smooth. The C.O was kind and very personable. We had a nice conversation. Most importantly, she was kind enough to accelerate the issuance of my visa in 24 hours so I could travel back to the US with my spouse that came to visit me on Valentines.

Despite having to wait 520 days for my interview the process was fast and smooth once K1 visa holders were able to travel during the covid restrictions.
My interview was scheduled a little under a month ahead, which gave me enough time to gather all the documents and make sure I got my medical exam papers.
The security is in front of the building in a black glass ''box''
I went there 10 minutes before but was told to wait, I was let inside 2 minutes prior. They stored everything that i had on me except for my document binder.
A list of documents i brought and the ones they actually took from me:

Had the interview today. Although I was a nervous wreck before, trying to get everything assembled the last minute (my interview was moved up 1 day so I had 5h to get everything done, but to be fair they did offer also Friday but I preferred day early rather than day late). Interview was great, the people were really nice. Most of the documents I had prepared, I didn't even need to show (did not ask for any pictures, chat logs, travels that we have done etc).
Questions asked:
-Tell me about your husband
-When did you get married?
-What are you going to do in USA?
-What will you do in summer? (My first job is seasonal)
-When do you plan to travel to USA?
-Where does his mom get her income? (we used my MIL as a jointed sponsor)
That was pretty much it. They kept my passport but I won't get it back before I figure out what happened with my New Zealand police certificate. Overall very nice experience. Took like 40 minutes and... read complete review

All in all pretty easy and fast. Got an interview date within 2 days, all the embassy people are very friendly and fast in what they do. Got to the embassy about 15 minutes early, and waited in the interview lobby. Got my fingerprints and documents taken and was left to wait for the consular officer. He came pretty quickly after 5 minutes of waiting. Got asked a few questions about my fiance and our relationship. My relationship to our co-sponsor (Fiance's mother)
Approved after 5 minutes
