I received my interview schedule back in March. I asked the consulate to reschedule it for May. I was told to wait for a month and then send them an email for reschedule. Since I did not want to wait I flew to China and went to the interview with my wife. The first day we wait few hours to hand in the document then was told our interview was cancelled. We never received any email saying our interview was cancelled but there was nothing else we could do.
We sent them an email in April to schedule the interview. I then email them every week asking for an update. They were very patient and asked me to wait. I finally got the interview at the date I wanted.
We were at the consulate at noon time, and handed in our document and got out at about 2pm. Since I sent them so many emails the clerks knew the situation of my wife already. My fiance flew back to Beijing on May 25 and we flew to Guangzhou on May 31. We stayed at Vili International hotel which is very near to railstation, about 10-15 mins by walk. We went to submit the documents on Jun 1 at around 10:00 am, but were told to come at 12:30 pm which the appointment letter indicated. When we came again at around 12:35 pm, there were already a long queue in front of the building. I was given an entry pass and my fiance accompanied me to the 5th floor. After I passed through the security check, I was given a number 119 which would be called by sequence. After 2 hours waiting, around 3 pm, I was called to window 30. It is a chinese young lady. She spoke in a low voice that I couldn't catch her clearly. She asked me few questions: are you a ccp? which country i've been to before? Is there a country I lived beyond a year? She took over the papers I prepared but she didn't require the ones like the chat log, emails, phone list, photos, etc.

Our interview started on the 1st with the document hand off. Even though the interview letter listed about 5 things that they needed the originals, the only documents actually turned over were the tax returns and I-864. We showed up at 12:30 where they started to let people in. By about 1:00 she was heading in to the consulate and it took about 3 hours to get through this step. The CO took her fingerprints and then asked her a few questions. How we met, has she ever been out of China and is she a member of the CCP. They put a green sticker on her interview letter and done for the day. Day two we arrived just before 7:30 with a backpack full of everything we had submitted plus the additional evidence since we got married. Here things got a little confused. Some people with the same visa type and same process didn't have the green sticker so we got separated in to two lines with the green stickers going first. My fiance's interview experience was great, because she got the PINK.
The first day when she dropped off the various documents, she got questioned a lot. With each document that she provided, she would be asked questions like: Where did you meet? How old is your fiance? Why are you submitting a co-sponsor? Who is your co-sponsor? Where are you from? What do you do for work now? Have you ever been a member of the Communist Party?
I had submitted a co-sponsor because in February of this year, about the same time that we got our NOA2, I found out that I had a tax lien from the IRS on me for back taxes. I addressed this problem by not only including a co-sponsor, but I also hired a tax consultant - http://www.ameritax.com/home I explained my situation and in record time, they were able to secure a structured settlement with the IRS and also have the lien pulled off of me.
