Interview process took a total of about an hour and a half. Fairly smooth process. They kept the original documents except for birth certificate they kept a certified copy. For the affidavit of support they only received 2017 1040 and W2s, they wouldn't take any other supporting documents. They didn't ask for any proof of relationship, they only asked a few questions about how and where we met.

The process for my fiance was fairly straight forward. After handing them the packet 3 with all the information requested they reviewed the information for about a half hour. Then she had a couple interviews, one in Spanish one in English (though they asked her if she spoke English, and since she can they proceeded in English). The questions were pretty standard: how and when did you and your fiance meet, when have you seen each other, explain overstaying a tourist visa 5 years ago (she accidentally overstayed her tourist entry by a few weeks one time), etc. Afterward she was informed she was approved and they would email her when she will be getting her physical copy of the visa in her passport.

We were pretty nervous for her going into it (just from hearing horror stories, etc.) but it was a smooth and friendly process.

It was a quick interview with the consular office, probably in and out of the embassy in less than an hour.
Fiancé and me were asked about how we met, and I was asked about previous entries to the US (I held a J1 visa in the past).
Overall, very painless experience.
