The embassy appointment was very easy. I was not allowed in as the petitioner which was expected. My husband entered with a binder of documents, but was only asked for the civil/financial documents, his ID + passport, and proof of relationship. My husband waited while those were reviewed and then was invited to go back to the interview. Notably, he did his whole appointment in English after endorsing his fluency. The interviewer was not a native Spanish speaker. He was verbally approved and they took his passport. The man said 2-3 weeks to receive our visa, but we were notified of pick up availability 3 days after. We picked up the visa 4 business after the interview.

It took around 1 hr and a half, but its more wait than what it takes to do the interview. They give you a folder with the order they want you to put the documents. Then they call you to give the documents needed (if you took the package to the consulate with the copy of the documents and 2 photos 5x5 its not necessary to take other copies and pics on the day of the interview). After looking at the documents they tell you, to wait for an interview with the consul.
The Consul will make you some questions, in my case was how we met, wich year, if he worked online, when did our relationship started and what was the last time I saw my boyfriend.
The interview was in english, but the Consul will ask you if you are confortable in english or not.

I arrived at the embassy 20 minutes earlier than my appointment and there was nobody in line, seems they were not performing tourist visa interviews that day. Once I got past security, I was led straight into a room with booths and given a blue folder to put my documents in order (current passport, expired passports, photo, birth certificate, police certificate, delivery confirmation, evidence of relationship). I was first in line so about 10 minutes later they called my name, took my fingerprints and took the aforementioned documents. No financial documents or anything else were requested (everything was uploaded to CEAC) but it's still good to bring them just in case.
After handing over the docs I waited another 10 minutes and they called my name again to a different booth. Whole process took about an hour and a half -- I (the petitioner) was not allowed inside at any point.
We were super nervous but thankfully it was as chill of an experience as it could be. I gave my husband piles of documents to take (like the I-864 and co-sponsor documents, taxes, pay stubs, vaccine info, etc.) but they only ended up asking for his passport, a 5x5 photo, marriage license, birth certificate, antecedentes penales con excepción art 51, the yatri delivery confirmation, and photo evidence. Interviewers were respectful, allowed him to do the interview entirely in Spanish, and asked the standard questions about our relationship.
He received verbal approval but was told to retake his passport photos (taken too long ago) and drop them off at the window outside the embassy, so we did that as soon as he came out. His visa was issued next day!

My fiancé got there at 9:20 for a 9:45 am interview. He was let right in.
He was called to the first window for the paperwork. He got scolded for not bringing the paperwork in in advance. I read the instructions multiple times and never saw that requirement. It literally says bring with you to the interview. Apparently they want them no later than 7 days prior, so be aware of that. Fortunately I had given him almost 100 pages of forms, documents, and pictures that they could POSSIBLE have asked for, so he had exactly what they needed.
He was the first one in today of the five visa appointments. The man doing the interview was very kind. Asked typical questions: where we met, when we last saw each other. He asked my fiancé if he knew of my prior divorces (yikes).
