These are all life issues, not Immigration. All the Supermarkets etc around me are hiring now if you are not here, you can not start for an unknown period well you have your answer. -

Sounds like you need a Plan B then if staying with her Mother is not an option. -
I do not know if she will be hit with the DS 5535, seems random, but you can probably expect longer AP.

You are applying for a family reunification visa, you need to show US domicile. So most Consulates show some flexibility and people can normally get by showing plans that they are in process. You are sort of showing the opposite. By all means try and you never know but it looks a weak case. I assume you have a joint sponsor lined up. -
