I plan to put together two folders for my fiancé to bring to her interview. Folder 1 contains documents required to bring to the interview. Folder 2 contains evidence that the consular officer might ask for.

Folder 1
Valid Passport Original PSA birth certificate Original NBI certificate Certified Copy of Divorce Decree Affidavit of Support including supporting documents Employment Letter Pay Stubs Last 3 Tax Returns in the form of Tax Transcript Folder 2
Evidence of ongoing relationship after petition was filed Pictures Messages Engagement Ring receipt Plane tickets, boarding passes, etc.
