So when I go to the interview they won’t ask for updated financial documents? Of the sponsor that no longer has a job?

Hello I need some help with my current case, I applied for my 2 year green card going through AOS and the k1 visa, I have had my 2 year green card for 6 months now. In about 18 months I need to apply to remove the conditions of my case. The joint sponsor that has been with us all throughout the case has lost their job and may not get another job, my income is not sufficient enough in the job I work in the US rn and my wife’s isn’t either. My wife’s uncle has more than enough income and would like to sponsor us so I can still have a sponsor. How would we go about maybe changing my sponsor before my interview for my 10 year green card of maybe just adding him, how can I make this work.

Quick question about AOS, do I need to apply for it within the 90 days or is a few weeks okay after to send everything off. Can’t get it done before but it will take a couple of weeks. Already married just not yet sent off the stuff and deadline is soon.
