Once you get the DQ email from NVC, you can ignore the status of individual upload items on CEAC. My spouse visa was approved back in 2021, yet the CEAC status of some of my documents still says "Submitted" to this day.
As for joint sponsor's documents, originals are typically not required. Bring a scanned+printed copy of the documents to the interview, just in case.
Re: domicile -- where does your wife physically reside? If she is in the US, it's unlikely that petitioner's domicile will even come up at the visa interview. If she lives outside the US, then yes, bring copies of as many US domicile evidence documents with her name as you can, to your interview.
