Should we also bring copies of evidence previously provided? For example, we submitted bank statements and utility bills from the day we moved in together until filing, should we bring copies of those to the interview or will updated bills and statements SINCE filing suffice?

Take copies with you to the interview.  No one has been denied for being over prepared.

May I ask, what evidence did you send with your i130?

Items that supported that we were in a bonafide  marriage.  Copies of boarding passes and hotels reservations for  trips taken together, photos dated and notated, bank and credit card statements with both names on it, proof we lived at the same residence, copy showing here as life insurance beneficiary, other insurance policies, wills, power of attorney, etc.   Items suggested in guides on this site.   Did you look at them yet?

    Hello Everyone!!!

Can anyone please suggest me a good consultant in Pakistan to file a student Visa for USA.

Guess you didn't read the answer in your other post.   You have to apply at a US University or Community College to get a student visa.   Find one that fits continuing your education from Pakistan.   Use your own initiative or at least use google.

Are we seeing any changes now that the Biden administration has stepped in, or is still Trump policies, which I am assuming are more difficult.

Here is the underlying issue.  Immigration is not funded by US taxpayers.  It is funded by user fees - that the immigrant pays.  The costs for those services, meaning employees, retirement, facilities, are paid the fees charged immigrants. USCIS can not hire more employees so everything has slowed down. Beginning in the late Bush administration thru the Obama administration, no significant fee hikes were approved.   Trump did propose fee hikes but was denied.  Ironically Trump provided a path to improvement but some people wouldn't accept any solution he put forth.
