I’ve always advocated for spousal visa, it just makes more sense and provides better options for beneficiary when it comes to work, travel, and definitely faster time to naturalization. And at 20 you're an adult. You don't have a path to immigrate based on listed relatives. Even if adoption were possible, it wouldn't count for immigration purposes - you're about 4 years too late for that. Go to school, get an education, get a job with a US company in UK and then try the work visa route.

File before deadline and wait for RFE. By the time RFE arrives, you'll have divorce decree in hands. You could even file tomorrow - check the divorce option. You'll get the 24 month extension before they get you an RFE. Once you know which office has your file, you can proactively send a copy of divorce decree while waiting for RFE.
