US Immigration from Vietnam

So we finally got our interview rescheduled. Initially we were supposed to go in April, now they contacted us last second to come in 9 days. Since the paperwork says A completed medical examination I-693 (unless already submitted) I thought nothing of it but now I m worried we ll have to do it again. My husband had his medical examination on April 1 2019, we married in June 2019 and filed the paperwork July 21 2019. Are we in the clear or is this going to cause problems?

I am sending my AOS packet tomorrow to avoid the new fees. Which carrier would you recommend for fast and safe service? USPS Priority Express to have the postmark date or UPS Next Day ?

My mother in law will be coming to stay with us for a few months from overseas. With covid going on we want to get her insurance for her time here. Does anyone have recommendations on where to purchase travelers/visitor insurance? Thank you

our case has been stuck at NVC since may 2020 and they continually blame covid from its failure to send our case to the consulate in ho chi minh city, although Vietnam has had no community cases for two weeks now. would it be worthwhile (or even possible!) to get our case transferred to Cambodia, where regular visa services have resumed? thanks

My wife has a pending AOS and I am trying to refiled the I-765 form for my wife after getting rejected due to outdated form.
On question 25 of the form, I-765 asks about the current immigrant's status. My wife came to the US on a K-1 visa, I am wondering what is her current immigrant status while having a pending AOS application.
Is it still a K-1 Visa holder or it is something else?
