US Immigration from Philippines

First off thank you all as Bretts & I would likely not have gotten as far as we have through this process as easily and painlessly thus far without VJ. Most questions we have had we have found answers here here but now I have one I'm not finding (at least as of yet). I emailed NVC requesting an update and received an email response (attached here) giving us our case number. Last night I checked CEAC and it says ready (also attached) so our question is since everything else has been gathered and CEAC is ready and we have our case# can she do the medical at SLEC and schedule her interview or do we have to wait for a different letter from NVC to arrive? Also curious but is it normal to have two case numbers (mnl########## 01 and an 02) when is just for her K1? If we are best served waiting til a letter from NVC or she receives her packet from the US Embassy before we continue any further?

So i've recived my NOA 1 hard copy today, super excited ,however my next question is that, what documents would my fiance need obtain now? I know that getting legal documents in the Philippines can be a hassle, should we after the NOA 2 or start now?

Next year we'll have to do Form I-751 within three months prior to the two year green card expiration date. I understand the form via the guide here.

Does USCIS look at the US citizen's income at the time of filing?

My (the US citizen) income currently is well below 150% poverty level. I'd need about $10,000 to increase my passive income, which is social security income. Must I return to work to increase income or is the income requirement now behind us? Currently I'm enrolled full time working for a Bachelor's degree and so I'm wondering should I put that on hold and get a job to make sure my income is above the 150% guideline?

We will have our interview soon and I think this will be a good reference for others with K2s.

My Filipina fiancee's visa expires January 8, 2020 so we are planning to fly together to the US on December 20th; she will get her CFO-GCP done November 25. We have a son together who is 1 years of age. He has his CRBA and US Passport; I've read he will either need a Philippine Passport and/or Emigration Clearance Certificate (ECC) in order to fly out. My fiancee's niece told her if he has a Philippine passport, he will also need a visa and I'm thinking ah geez, that may take some time like hers. I just want our family together. Can someone please tell me what we will need here? Mr. Greenbaum said a "HANK" would be able to get me the current requirements for our son in the Philippine subforum. I'm not really great at navigating these forums. Your help is much appreciated. Thanks in advance.
