Putting application on hold..?

Hi all, I have a question regarding the dreaded C word. Our application is still awaiting approval from USCIS (Oct expected approval date). Does anyone know how much time you have once the visa is transferred to NVC to act? Covid has changed our plans a bit and we feel we need to stay in our current country (New Zealand) till things settle in the US. We aren't sure if an application can be put on hold or withdrawn without penalty down the road when we are ready to try again. Any information would be greatly appreciated.

Meeting income requirement without a sponsor

We are currently still awaiting our NOA2 for the I-130. I moved back to the US to try to get a job as job hunting from overseas was proving difficult. I just received a job offer way above the minimum requirement for a two-person household. I made all foreign income last year so my 2019 taxes show I made $0 so we are hoping my offer letter along with however many paystubs I can get before we get to the next stage will help. My 2018 and 2017 income was extremely low as I was in graduate school. We have a ZERO chance in getting a joint sponsor. Do you think this will be sufficient enough?

Our RFE documents got delivered on April 14th. When can we expect an update on our account that the RFE evidence was receieved? We contacted USCIS and they said 60 days. I went through VJ and saw others getting an account update shortly after they mailed their documents. I just want to make sure they got our documents :(

Expedite based on USCIS error?

Has anyone had any success in expediting based on a clear USCIS error? We filed our I-130 petition online. We recently received an RFE saying:

You did not submit a copy of the Form I-130, Petition for Alien Relative, at the time you submitted
the documentary evidence. Therefore, U.S. Citizenship and Immigration Services (USCIS) requires a
copy of the original petition and your signature to continue to process your petition.

We called USCIS and spoke to a Tier 2 Officer who said that our file does have the I-130, but to follow the RFE to prevent delay. We have payment confirmation, NOA1, and I did screenshots of the entire online process documenting everything to show certain items must be ticked and filled in order to complete the application including digital signature and acknowledgements. Therefore, because we have an NOA1 and payment confirmation, this confirms we successfully submitted the I-130. He filed an expedite request to the service center but he did not ask for evidence. I am sending out the RFE materials (a filled out I-130) overnight as well as a separate document with our evidence showing a clear USCIS error. Do you think this is a clear USCIS error?

HELP! Confused by a RFIE

We just recieved a letter in our account for Request for Evidence. I am assuming initial evidence as our PD is February 2020. The request is as follows:

You did not submit a copy of the Form I-130, Petition for Alien Relative, at the time you submitted the documentary evidence. Therefore, U.S. Citizenship and Immigration Services (USCIS) requires a copy of the original petition and your signature to continue to process your petition. The petitioner must sign the form on page 9 of 12. A photocopied signature is not acceptable.

We are confused as we filed out I-130 petition online and now they want a hard copy. Has anyone had this happen to them? Do would just print out and complete the I-130 form manuall and mail it to them?
