Old-Fashioned Baked Macaroni & Cheese

You will need:

1.5 - 2 cups of elbow macaroni (or penne or rigatoni or any of the smaller tubular shaped pastas.... even small-to-medium sized shell pasta could work)

1 large onion, diced

salt & black pepper to taste - maybe 1/4 to 1/2 teaspoon each

1/2 cup butter or margarine

1/2 cup flour

3 1/4 cups milk

16 oz. shredded cheese -- I like cheddar, monterrey jack or colby -- or you can always use Velveeta (cut into small cubes)

First, boil your macaroni in water until slightly tender (add a teaspoon of salt to the water for flavor if desired.) Drain and set aside.

Melt the butter in a medium sized saucepan, then add the diced onion, salt and pepper. Cook over medium heat, stirring often, until the onion starts to get limp. Stir in the flour and blend well.

When the mixture starts to bubble, remove the pot from the heat and stir in the milk. Return the pot to the stove and bring to a boil, stirring very often (milk will scald easily.) Let it reach a good rolling boil for 1 minute, then remove from heat and stir in the cheese until blended.

Place the cooked macaroni into an ungreased casserole dish (at least 1.5 quart size.) Pour the cheese mixture on top, and gently stir it into the macaroni.

Bake at 375 degree oven for about 30 minutes.

It's delicious "as is," or sometimes I arrange some fresh tomato slices on top as a tasty garnish. You could also use olives, bread crumbs, or whatever you like !

hello guys! i'm having problem in cooking, most of time, i usually serves fried foods in the kitchen, i want something new recipes. Any suggestions. Thanks!

My mom had given me a copy of a recipe magazine, "Taste of Home," that has homemade recipes from readers around the country. The recipes are excellent and REAL - most of them don't call for any exotic herb or ingredient.

I don't think there's a better collection of recipes that best reflect American food! Great recipes!

id like to suggest www.foodtv.net i usually grab alot of recipes from rachel ray... most of her recipes are quick and easy, she has a show on foodtv called 30 minute meals. its quick enough so you dont spend half the evening just preparing meals. especially on a weeknight.

id like to suggest www.foodtv.net i usually grab alot of recipes from rachel ray... most of her recipes are quick and easy, she has a show on foodtv called 30 minute meals. its quick enough so you dont spend half the evening just preparing meals. especially on a weeknight.

I use Food TV a lot too.

Rachel Ray is one of my favs...

She also has a magazine that I love now too.

There is a section that has a meal in under 5 ingredients. I have used all three that she has suggested and I love them!

I make pretty good cheese enchiladas. Take a dollop of sour cream on a large spoon and dump it in a mixing bowl. Then add a small can of olives and a smaller can of green chiles. Add a LOT of shredded Mexican cheese, like 2 pounds worth. Mix thoroughly.

Take a Pyrex pan and spray Pam or other cooking spray in it. Put a shallow pan on the stove, pour vegetable oil, and heat to medium. Next make the echniladas: fry a corn tortilla for 15-20 seconds, place in the pan, fill with your cheese mix, and roll. Repeat until the pan is full. Pour 1/2 a can of red enchilada sauce (I use Las Palmas) and top with a thick layer of shredded cheese. Bake at 350F for 30 minutes, make sure it's bubbly. Remove, let it set for 10 minutes, then serve.

ajames... hmmm i may just take that magazine into consideration. 5 ingredients ... i like! :) i havent been cooking alot... ive no one to cook for yet. but im getting ready for the hunny what's for dinner sorta thing. i love to cook, but rarely find any reason to do so right now. i tend to over prepare so it ends up being consumed by me and the two dogs. ahhaha... but whenever i feel like prepping a meal, i usually wait til im hungry so i cant wait a long amount of time, otherwise id pass out! thats why 30 min meals work so well for me.

I maybe got a little cheesy...but I bought one of those old fashioned composition books..glue..and everytime I find a recipe that looks yummy and do-able I cut it out and put it in my book. I also include other things I might see along the ways..crafty ideas for christmas gifts or something. NOW I swear that i am not normally one of these type people(crafty)...but I have enjoyed this a lot. When I can't think of something to cook...I pull the book out and look.

my aunt does that. she has the same thing as you i think but i think she started gathering these recipes in the 70s. hahaha. whenever i visit her, i see that little notebook of hers, all tattered and torn but she loves that notebook! she likes reinventing recipies. you see pencil marks on the side of each page like little notes. it's cute.

mmmmmmmmmmmmm cheese. i loveeee cheese!!!! its funny i was trying to make indonesian curry which required basil leaves. so i got a whole bag of it sitting in the fridge. not like i can just buy like one or three stalks of it. im hoping it's still alive so i can try out your recipe. yarks now im hungry. hahahahh

if you can please share it with all of us. im sure there's a couple of cheese lovers like me too... hahaha ... everytime i eat cheese i always have to say how much i love cheese... my fiance mimics me ... i didnt realize i did it so often until he would just say it whenever i ate something with cheese.

i was thinking of getting a little clearbook. i thought about it last night. just put all my recipes together and somehow organize it. i have them in different folders in my computers. some i have at work, some i email to myself, some in my laptop supplied by work and some hre on my pc. time to get organized.

i need to keep myself busy, i got tired of cleaning the house on weekends to let the days pass by faster. maybe the cookbook is a new project :)

Okay..Amanda's (adapted from Rachel Ray's) Easy Pizza Recipe...

First you can add what ever ingredients you wish...so far I have tried a lot and they all work well.

1 can of philsbury pizza dough. (now..I use the reduced fat crescent rolls and make them in to squares for personal pizzas)

From here I just spread the dough out (read the can to see if it needs a greased pan, some do some don't)

Brush olive oil on the dough and sprinkle with parm cheese. Bake at 375 (but check can) for only 8 minutes...this starts the dough to get a little brown!

Then add your toppings.

my toppings:

Grilled chicken chopped

fresh basil finely chopped

mozz cheese shredded

feta cheese (I use reduced fat)

Roma tomatos

(I have also used turkey italian sausage and it was just as good)

layer on pizza and bake for another 10-15 minutes.

The directions said to drizzel more oil on it before baking but I didn't and it was very yummy.

experiment..add sauce...do whatever! It is really good I promise!

p.s. I would put it in the forum recipe thing..however I started it here so I will leave it here if that is aokay with everyone! :)
