I have a filipino soup recipe that is really easy and tasty. You have to buy the mix though which I have found at all Asian supermarkets I have been to and I even found it at rainbow the other day...

it's called sinigang something or tamarind seasoning mix. There are other brands besides Mama Sitas so just keep your eyes peeled. You just don't want sinigang ng bayabas... it's nowhere near as tasty.

If you can find the mix then you just add whatever you have in the fridge. You can add meat or shrimp (like on the package) or do it veggie.

general instructions:

You fill your pot with water add the mix and stir (the package should tell you how much water)

Then you let it simmer while you prepare your other ingredients...

cook meat (pork or beef or chicken or shrimp) in a separate pan. I usually use one package of whatever I bought.

cut veggies such as celery, green beans, onions or whatever you like.

You can cut and add potatoes but I've never been successful as far as consistency when adding potatoes to a soup :(

I usually wait until the mix is dissolved before I add the other ingredients

Then bring it to a boil.

Let it boil for a couple minutes then turn it down to a simmer.

Cover and then it can sit until you are ready to eat...even for an hour or two is fine.

When I make it I usually get pre sliced chunks of pork and cook that before adding it to the broth.

I usually add (washed and chopped in half) green beans, chopped celery including the leaves, green onions (because I don't like the other kind), sometimes chopped tomatoes. I think I may have also used green peppers before. Potatoes are a bit tricky for me so I only add those occasionally.

I know you wanted specific instructions and amounts but one of the reasons I like this soup is because I just add whatever I have in the fridge. I may have just a handful of green beans but a lot of celery and that's just what I put in. The broth is what makes the soup and has a wonderful tang to it that makes it oh so delicious. It's also easy to make ahead of time and let sit on the stove leaving you plenty of time to get ready or mingle or whatever you need to do.

Easy cheats soup.

Chicken and Corn

1 x barbecue/roast chicken (remove skin tear flesh into bite sized pieces)

2 x cans of creamed corn

2 x cans of corn kernels (drained)

1-2 cloves of garlic

1 x onion diced

1 spring onion (finely chopped)

500 ml of vegetable or chicken stock

1 tsp olive oil

Add olive oil, onion and garlic to large pot stir till onion goes clear.

Tip all other ingredients in, bring to boil, lower to simmer 5 mins

Serve with Crusty Bread and cracked black pepper

this is a super easy soup to make in a crock pot, you could make it on the stop top too though...

Easy Vegetable Beef Soup Recipe

1 lb ground beef

14 1/2 ounces beef broth

16 ounces frozen vegetables

14 1/2 ounces diced tomatoes

10 3/4 ounces condensed tomato soup

1 tablespoon minced onion

1 teaspoon italian seasoning

1/4 teaspoon garlic powder

1 1/4 cups water

1. In skillet, brown beef and drain off fat. Place beef in 3-4 quart crockpot.

2. Add remaining ingredients.

3. Cover and cook on low for 7-8 hours or high for 3 1/2 to 4 hours.

and this recipe is one of my favourite soups..

Minestrone

2 pounds ground beef

1 large onion, chopped

1 clove garlic, finely chopped

1 can (28 ounces) whole tomatoes, undrained

1 can (15 ounces) kidney beans, undrained

1 can (12 ounces) whole kernel corn, drained

2 cups shredded cabbage

2 small zucchini, sliced

1 cup uncooked macaroni

3 1/2 cups water

2 teaspoons OXO beef cube

1 1/2 teaspoons salt

1 1/2 teaspoons Italian seasonings (basil, oregano etc)

Cook and stir ground beef, onion and garlic until beef is light brown, drain off excess fat. Stir in the remaining ingredients; break up tomatoes with a fork. Heat to boiling and reduce heat. Cover and simmer, stirring occasionally, until macaroni and vegetable are tender about 10 minutes.

Do Ahead Tip: After browning beef add all ingredients except macaroni; cover and refrigerate no longer then 24 hours. About 20 minutes before serving add macaroni. Heat to boiling; continue as directed...

I'm a little late to help you with the lunch dilema, but I made this soup twice this week, it's yummy! And I've never made soup before and both times they turned out great, so here you go.

Creamy Veggie Soup

Ingredients

• 9 cups water or chicken broth

• Chicken soup flavouring

• 5 potatoes

• 3 carrots

• 3 stalks celery

• 2 onions

• 2 tsp. dried basil

• Salt, pepper

• 1/2 cup flour

• 3 cups milk

• 1/4 butter

Instructions

1) Cook together 9 cups water or chicken broth, 5 potatoes cubed, 3 carrots sliced, 3 stalks celery-sliced, 2 onions-diced

2) Add 2 tsp. dried basil, 1 tsp. salt, 1/2 tsp. pepper

3) Add chicken soup base flavouring to taste (~4TBSP)

4) Mix 1/2 cup flour with 3 cups milk. Cook separately with 1/4 cup butter

5) Add some soup to the milk mixture then add milk mixture to soup

6) Stir to heat through.

Hmm...I actually hate soup and my mom made this recipe and now I make it ALL the time!

2 cans of tomato soup. Add approx. 5 cans of water (depending how thick/thin you want the soup). Bring to a boil. Add 1 pound of ground beef in little pieces to the boiling soup. Allow to boil for a few more minutes. Add one package of lipton chicken noodle soup. Boil for about 8 more minutes. Then simmer for 15-20 minutes.

That's it! It's DELICIOUS!!! :)
