i threw some chicken and some mushroom soup and some parsley and some peppers in the crock pot.. we'll see what happens!

You could also throw in a package of brown gravy mix dissolved in hot water and have a chicken fricassee.

package of brown gravy? huh? :)

you gals are hilarious!! I was just going to make some rice and use the drippings as a gravy.. but you all are getting Faaaancy..

I have a chicken fricassee crock pot recipe that I love. I make it often.

4-6 chicken breasts

1 package Pioneer Brown gravy mix dissolved in 2 cups hot water (or 2 packs McKormicks is you can't find Pioneer)

1 can Campbells chicken and mushroom soup

2 to 3 TBSP Kitchen Bouquet (Kitchen Bouquet is a bottle of dark liquid that darkens and adds more flavor to gravy)

Seasonings- I like Tony C's creole seasoning, Mrs Dash, whatever you got is fine

Salt, pepper

Mix it all together and add to the crock pot- I find cooking low for about 5 hours is perfect. The chicken is awesome- I love how it just falls apart.

Serve with rice or mash potatoes, some veggies and you got some good eats.

Now THAT I can do.. mmmmmmm sounds good.. i'll do that next time for sure!!

Last night, my mom and I had Thai .... beef with green curry and shrimp with mixed veggies. I have no idea what hubby had. Being left to his own devices, the man probably had cheezies or some other equally nutritious food

Tonight is clear out the leftovers from the fridge .... so leftover bbq steak, rice, broccoli, the last chunk of meatloaf unless hubby eats it for lunch ....

Yep, we definitely had the spaghetti with meat sauce and caesar salad. Tomorrow is Ma Po Tofu. Friday is meatloaf. Saturday..... I think I may have the burger.

Oh, the burger you say.

We ended up having take out burgers last night, due to the fact that there was no cheese for pizza.

I might have a burger Saturday too

So where are you going for dinner Saturday krikit??

Tonight, since I cooked that sausage for pizza which I didn't make - I think I will whip up some kind of scramble with it.

I'm meeting friends for dinner at a local pub. Looking forward to it. :luv:

Yes, a scrambled egg, peppers, and snausage scramble would be quite tasty. I pulled off a recipe from the ground pork package I took out yesterday. Even though I don't usually go for that type of thing, it looks interesting:

Pork Picadillo Pie

3 cups ground pork

1/2 cup each chopped onion and green pepper

1 clove minced garlic

2 tablespoons bacon drippings or shortening

1 can (15-oz) whole tomatoes, cut up

2/4 cup chopped dried apricots or raisins (yeah.... I think I'd leave these out)

3/4 cup sliced pimiento-stuffed olives

1/2 cup pine nuts or slivered almonds, toasted (these would be toast in another way)

3/4 tablespoons chili powder

2 cans (14.5 oz) chicken broth

1/2 cup butter or margarine

2 cups yellow cornmeal

Heat bacon drippings in large skillet. Cook onion, green pepper and garlic over medium-low heat for 5 minutes. Stir in pork, tomatoes, apricots, olives, nuts and chili powder. cover, cook for 15 minutes.

Bring chicken broth to a boil in large saucepan; stir in butter until melted. Gradually stir in cornmeal; mix well. Spoon into 13x9-inch baking dish. Top with pork mixture. Cover with foil. Bake at 350 for 30 minutes. If desired, sprinkle with shredded cheddar; bake 3 minutes. Cut into squares.

Serves 8
