I am making Asian chicken stir-fry and rice tonight... I am going to use a combination of peas and corn and maybe carrots...

Asian Chicken Stir Fry Recipe

Ingredients:

1 tablespoon vegetable oil

1 pound boneless chicken breasts, cut into strips

1 can Golden Mushroom soup (I just use regular mushroom soup or you could use cream of chicken soup)

1 to 2 tablespoons soy sauce

1 teaspoon garlic powder

1 (16 oz. bag.) frozen stir-fry vegetable combination, thawed (you could use any combo of vegies even fresh)

hot cooked rice

Heat oil in skillet. Add chicken and stir-fry until browned.

Add soup, soy and garlic. Heat to a boil. Add vegetables, and cook until tender-crisp. Serve over rice.

* you could add a little water if it is a little thick...

keeping this recipe to make sometime..looks good Marilyn..I love to make stir fry's...I made BLT's earlier but because my husband leaves for work at 230... I get a little hungry later at night.. so I had some veggies that needed to be used ASAP..so threw together a stir fry tonight.. I usually do the same ol kind because we love it..

bean sprouts, mushrooms, red and yellow onions, green and red bell peppers, spinach, shredded cabbage, celery, soy sauce, lots of black pepper, about half a can of those fried onions (makes it extra yummy)... and sometimes I will make a package of ramen noodles and mix it in for more of a low mein flavor... love the way the house smells when making stir fry..

lazy tonight . . . left over roast chicken sliced, macaroni shells with cheddar cheese, steamed seasoned zucchini and corn bread - but we do have fresh strawberries for dessert

mmm, dinner was yummy... pulled pork and potato wedges.. yum yum..

for the wedges I just peel the taters and cut them into quarters .. then I mix together some Parmesan cheese, salt, pepper, garlic powder, paprika, and chili powder and then I throw it in a ziploc bag with some oil and then toss in the potatoes and shake it all together until the taters are coated and then you bake it in the oven....

I love cereal for suppers! :lol: Especially cream of wheat. I haven't done that in ages...mainly because Gene wouldn't like it....but I do have it for lunch sometimes.

I made oven burritos last night and omg were they delicious! I used that left over tenderloin we had. Two left over today, so Gene and I both have lunch. I'm going to go for something light tonight. I just don't know what!

I did make a gingerbread cake the other day. We've had a few pieces with whipped cream....mmmmmmmmmm Better to eat it the day after you make it, much more moist!

kimmbo...I'm going to try some of your Tim's recipes! Thanks for sharing!

I put too much pepper on them and my wife laughed and said they were good other then all she could taste was pepper. So with that back to boring cajun chicken and brocolli tonight and clam fettucini tomorrow and burriots (yay) on Fri...

I'd say if the only problem with them was too much pepper, then you did alright! :thumbs: Don't go for boring...you seem to be experimenting and that's the best way of finding new ways to serve things!

I had no supper last night because a neighbour and I went to lunch! We had Gyros and they were absolutely fabulous. Messy, good..mmmmmmm (I almost dreamt about them last night!). Anyway, I was stuffed, so I made Gene a salad and grilled cheese salad. He's been a bit under the weather the last week. Actually today he's home sick! Don't know that we're going to have anything other than soup tonight...maybe I'll make a nice brocolli soup for supper.

That's something I need to try is steamed artichokes. We both like them and it would be a change from the normal veggies we have. So now the question is how do you prepare the artichoke? I have only ever had them on pizza...
