Looking for a good Coleslaw and Fruit Salad

I read it as two separate salads--so I'll give a fruit-salad recipe.

Ingredients:

  • 1 valencia or 2 mandarin oranges--peel and separate slices
  • 1 mango--slice into 1/2" cubes
  • 15 regular-size grapes, any colour
  • 10 cherries
  • 1 pear--1/2" cubes
  • 1 guava--1/2" cubes

Easy one!

Cabbage

Honey

Mayo

pineapple chunks

vinegar

and some pepper!

Works fine!

Put the time on the barbee

Shrimp

Teri steak

Oysters

Hot dogs for the kids.

Whole peeled onions wrapped in foil with butter inside!

you don't need a recipe for fruit salad! just pick all your favorite fruits and cut them up! i'd stay away from fruits that oxidize like bananas, pears, and apples. unless you squeeze some lemon juice over it (which would be good)

another good way is to cut all the fruit and add some vanilla yogurt and chopped fresh mint in.

my hard drive crashed and i haven't fixed it yet. but you can easily wing this recipe too. use a recipe loosely like this:

1/2 small head green cabbage , shredded

1/2 small head red cabbage, shredded

4 large carrots, scrubbed or peeled and shredded

2 cups (16 ounces) good mayonnaise

or you can subtract some mayo and add some sour cream to equal 2 cups. i like a mix.

1/4 cup Dijon mustard

2 tablespoons whole grain mustard

2 tablespoons apple cider vinegar

1 teaspoon celery salt

1/2 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

1/2-1 cup chopped fresh parsley leaves

mix all the dressing ingredients together then add the veggies and mix well. Cover the bowl with plastic wrap and refrigerate for several hours to allow the flavors to meld. Serve cold or at room temperature.

i have an awesome recipe for coleslaw.... you can reduce the amount of sugar if you want...

1 (16 ounce) package of coleslaw

1/2 tablespoon minced onion

1/3 cup white sugar

1/2 teaspoon salt

1/8 tsp black pepper

1/2 cup mayonnaise

1/4 cup buttermilk

1 1/2 tbsp white vinegar

2 1/2 tbsp lemon juice

Combine coleslaw mix and onion in a large bowl. In a separate bowl combine the rest of the ingredients and mix until smooth. Pour over coleslaw and onion mixture. Stir well and chill for at least an hour. I like to chill it for a couple of hours.. It might get a little soupy the longer it sits but just serve it with a slotted spoon...

here is another good fruit salad...

cut up a bunch of fruit.... I like to use watermelon, strawberries, grapes, bananas.. I wouldn't use citrus fruit or apples in this salad....

mix together some yogurt and cool whip.... use your best guess but use less cool whip then yogurt. i like to use raspberry yogurt because it has a stronger flavour... pour yogurt mixture over fruit and stir gently. Refrigerate for about 30 minutes or so....

this isn't a cole slaw but it is still a very good salad...

Overnight Salad

1 head Iceberg lettuce (has to be a crisp lettuce)

1 red onion

1/2 Red Pepper

1 - 300g pkg. frozen green peas (not thawed or cooked)

8 slices lean bacon

1 cup grated Cheddar Cheese

Dressing:

2 tbsp. sugar

2 cups mayonnaise

2 hard boiled eggs (optional)

Cook bacon until crisp, drain well, and break into bite size pieces.

Chop onion and pepper into small pieces.

Break up lettuce and put in bottom of a wide glass bowl. Top with layers of onion, pepper and frozen peas and eggs if using.

Mix together sugar and mayo. Cover the top of the lettuce, onion and pepper layers with the dressing all the way to the edges. Top with the cheese and bacon pieces. Cover bowl tightly with plastic wrap and place in the fridge overnight.

Serve from the bowl but do not mix the salad.

steven, i'd also stay away from citrus fruit in the salad. but its just not my cup of tea when eating a fruit salad. unless you are squeezing it over the entire salad. but chunks of it inside aren't as good.

i prefer something like this: mango, papaya, pineapple, grapes, melon( you pick your fav that is RIPE), and various berries.

if you must add apple i'd use green. squeeze some orange and a lime over it. lime gives a nice pick me up flavor. you could also add the yogurt and mint on top of all that. and you could also grate some lime zest inside too if you want to make it even more complex. ;)

don't stop posting them! i wasn't putting you down! i love bacon, eggs, cheese, and mayo! in fact those are four of some of my favorite ingredients! *DROOL if i weren't using alli and trying to lose 15lbs i'd make that salad myself! ;)
