Oh boy amal what a challenge but I'll take a crack

Beef Stroganof with potatoes (not pasta!)

Use a pound of ground beef - brown it up and drain off the fat. Add some salt, pepper and garlic to your taste. Then add about 1/2c -1c of heavy cream or whipping cream (we like ours creamy you might not!). Let it cook down so that it's really a sauce and not just liquid. The potatoes should be baked and cooled a bit. Make a little cave in the potatoes to fill with the meat and top with some sour cream. (We add mushrooms but if you don't like them you don't have to add them.

Pesto/Parm Tenderloins with Butter Garlic Butter Sauce

In a food processor throw in some basil (fresh) and garlic cloves and olive oil (to make a paste). This depends on what you're making but say for 4 tenderloins (you also can use whatever cut of meat you like. I use a good handful of basil and 4-5 garlic cloves. I usually cook my beef in the pressure cooker first because if it's tough at all hubby doesn't like it. Put some salt and pepper in the pressure cooker with the meat and cover the meat with water. The should cook about 40 minutes, again depending on the size. Take it out and put in a cast iron skillet or other baking dish. Coat the meat with the pesto mixture on at least one side. Sprinkle with some parmesan. This won't appear as melted cheese but will add a little bit different flavor and texture. I then add a 1/2 tbsp butter on top of each piece of meat. Cook in an oven at 350 for about 20 minutes to get a good crust. Take it out of the oven. (this is where the cast iron comes in handy) Put on the stove top, and add some butter or beef stock (up to you) to pick up the pieces of the coating that melted off. Stir until you have a sauce. Slice the meat and top with the sauce.

Moroccan Fried Chicken

1 medium onion

3 cloves garlic

water

1-2tsp each of saffron, parsley, pepper, ginger, salt

1/2 tsp cumin

inside of one preserved lemon

whole chicken

vegetable oil

Chop onion and garlic and blend together in a food processor. When blended add to a large cooking pot. Mix spices the inside of the preseved lemon and a little oil together in a bowl to form a paste. Rub this all over the chicken until fully coated. In the large pan with onions, add the chicken, and cover with water until chicken is almost submerged. Turn on high until boiling then reduce to medium. Let cook until cooked through but not falling apart (about 45 minutes). Once done remove the chicken and place in a collander - allow it to drain until chicken is totally dry. Meanwhile leave the liquid on the stove to reduce to a sauce. You can add some olives to the sauce if you like. When chicken is totally dry, heat up a frying pan with enough oil to fry (1/2 inch). Place chicken in hot oil breast side down first. Fry all sides of the chicken. Once it is crispy, remove and place on a clean plate. Warm up sauce and pour around the chicken (not on top!) - You can also sliver the remaining piece of the preserved lemon and place it on top of the chicken. Great with french fries!!

I forgot my latest creation - Stuffing Meatloaf.

So get it ready like you do normal meatloaf (there's like a million ways pick your favorite.) Divide the meat in half. Put down the first half. If you have some leftover use it otherwise make a batch of instant stuffing. When it's done add a layer of that on top of the meat. I top ours with Gouda cheese but you don't have to add cheese. I do add other things to the stuffing like dried cranberries and nuts. Up to you. After the stuffing layer, add the rest of the meat and cook until done! Alternately I'd like to try the recipe with a rice pilaf of arborio rice and some other ingredients. But this is really great with the stuffing I think they will like it!!

Not snowed/iced in here either.... :crying: ... apparently my mothers house is still under ice coz nobody is answering their phones. Of course me and my excessive worrying has them all frozen together due to the propane heater going out... I'm really worried about them... She had some "choice" words to say to me when I told her that it was 80 degrees here. I told her I'd gladly change places with her. I should be leaving for a visit on the 22nd so I hope everything is good to go by then.

Sorry to hear about the puppy. I've had to put a couple animals to sleep in my lifetime and it truely is one of the hardest and saddest things to go through. I hope urs gets better. :luv:

I was too sick to come back to VJ yesterday so I got to finnish Sundays daily thread today. I am too stubborn to cook 2 meals so I always cook stuff he likes. I'm not too picky though so its ok (most of the time) . I do, however, need some suggestions coz we eat the same things alllllllllllllllll the time due to "his highness" being so picky.

Here's what he doesn't like... boiled veggies, pasta (of any kind), canned diced tomatoes, tomato sauce, anything with melted cheese in or on it, beans, chili, american bread, mashed potatoes, sweets, turkey, frozen dinners, anything microwaved... I'm sure there are more but these are just the ones off the top of my head......

My son hates everything hubster hates only he also hates 99% of the veggies available

Then there's me.. I'm trying to stay away from carbs-- rice and breads. I can't stand fish or any other kind of sea food, and hate hate hate mushrooms.

We do a lot of chicken and beef (no tongues, brains, gizzards, livers, eyes, etc etc) sometimes lamb

With that being said, do any of u have any quick and easy meals that could accomodate all of this?? I'm totally at a loss here and just sick of eating the same stuff all the time. :help: any suggestions would be greatly appreciated...

Try going to the store and buying pre-made pesto and coating both sides of salmon steaks with it, then grill. Works for Ammar and he doesn't like most of those things you mentioned as well. I served it with fries or rice, although "fish and rice do not go together." :)

None of my posts have ever been helpful. Be forewarned.

Hi All! We got 5 inches of snow last night. I just had my first final of the week and I know I aced it! Have a good one!

We have these heated unground tunnels that melts the snow on the side walk. Nice huh!

I think I might do a cake and some champagne...

Growing up, I never ever got a choice of what I was going to eat. I ate what my mom cooked regardless of if I liked it or not and we were not excused from the table until we were done with our plate. The only exception to this was when my mom made fish which she usually would fry whole and she knew there was no way my brother and I would eat that, so we got fish sticks

any excuse is a good excuse to drink the champers!!!! i love champagne!!!!

I agree with ammar, fish and rice don't go together. :no: When we make fish, we usually make fries, or garlic potato salad (boiled cubed potatoes, garlic, parsley, lemon, EVOO, salt, pepper), some kind of tahini salad, hummos or baba ghanouj, broiled or fried pieces of eggplant, and tons of bread.

Fish and rice are perfect...think sushi!

Well yes in that form, its very good. However many MENA fish dishes are made of a whole fish which is broiled or fried and I dont think rice goes with that.

I see. You're right. Similar in Italian cuisine as well. Only potatoes would be acceptable as a side dish if the fish is prepared that way.

I don't know if it's a New England thing, but baked haddock pretty much has to go with rice pilaf.

I dont think I've ever tried Haddock.
