I thought I would say YUCK after reading most of your comments. But, my Jamaican husband cooks a lot of the things mentioned.....although, I think with better ingredients.

yeah, there's definitely a right way to cook that kind of stuff, and a wrong way. in jamaica, thailand, etc, though they certainly find ways to make really yummy food out of stuff that in the wrong hands, like the good people at weight watchers circa. 1970s, would just turn my stomach.
