All -

When is the best time for my fiance to take my last name? Once we get married and file for the AOS is there any certain point in the process when it is better to change last names?

when filling out the I-485, she should put down name using as married name.

Best time is when you marry, and before filing for AOS.

If you decide on changing the name after getting green-card, you file I-90 and pay a $370 fee.

Is now a US Citizen immigration completed Jan 12, 2012.

When filling out the AOS application, use your married name for her in last name, because if you do not later on it will be a major headache changing her maiden name to married name, also when you file the AOS they will be looking at your last name you wrote on the AOS application and then trying to match it up with whatever, believe me it will save you time, also when you get green card issued you want it in the married name, then you can go have her social security card name changed and they will ask to see that green card to verify her name change.

When you guys get married she will be able to change her name: she will sign the marriage certificate in her new name and do all the AOS paperwork in her new name as well. To change her name with the German authorities and on her passport she will have to contact the German consulate in the US.

My Russian wife is busy changing both her Russian and international passports now so when she gets her visa the names will match. Maybe that's no big deal in Germany but it is in Russia.

Nope, no big deal in Germany. A little paperwork, yes. But pretty common and therefore no big deal.
