The I-864 does not need to be notarized. (None of the typical forms for AOS do either.)

I-864 does not need to be notarized.

I think the only thing that we had notarized was my wife's Certificate of Translation from her birth certificate but that we had from the K-1.

Nope, you do not have to notarize I-864.

You should send a certified copy of your marriage certificate with the AOS application though (or at least have one ready for the interview later on).

We sent a plain copy of marriage cert in with the AOS petition.

Followed USCIS recommendations:

USCIS no longer routinely requires submission of original documents or "certified copies." Instead, ordinary legible photocopies of such documents (including naturalization certificates and alien registration cards) will be acceptable for initial filing and approval of petitions and applications.
