SSN is not needed to AOS. If your I-94 is expired you will not be able to get an SSN until you have an EAD or green card. the I-751 is to remove conditions, you still have two years or so to go before filing for that. you file an I-485 to AOS.

This is an AOS question not a K-3 Visa question so belongs in the AOS forum.

SSN is not required to file for AOS.

In order to get SSN after K-1 I-94 expires, you need to have EAD card or Green-Card, SSA office will not issue SSN with out proof of work authorization from Homeland Security.

I-751 is for lifting conditions on a conditional green-card, it sounds like you have not received green-card yet.

The FAQ, and Guides spell out what to do at the various stages of immigrations.
