Ugly Naked Chicken

Thanks Marilyn , it did sounds yummy but I'm curious why it called ugly? :lol:

that is the name the person gave it who came up with the recipe.. she said she called it ugly because she thought the chicken looked ugly without its skin...

It may be the ugliest chicken you've ever seen (especially if you skin the chicken first, as I usually do), but it sure does taste good.... ....This is my adaptation and I gave it the name "Ugly Naked" based on my method of skinning the chicken.

Ugly Naked Chicken

8 pieces bone-in skinless chicken

garlic powder, to taste

salt, to taste

black pepper, to taste

1 cup honey ( i cut back on this and use about 1/3 cup honey & 1/3 cup brown sugar)

1/8 cup soy sauce (I use low-sodium)

1/4 cup butter or margarine

1/8 cup Worcestershire sauce

1/8 cup lemon juice

1. Preheat oven to 350 degrees F.

2. Place chicken pieces in a 9x13" casserole sprayed with nonstick cooking spray.

3. Generously sprinkle chicken pieces with garlic powder, salt and pepper to taste on both sides.

4. Bake, uncovered, for 40 minutes.

5. Meanwhile, in a microwaveable bowl, combine honey, soy sauce, butter, Worcestershire sauce, and lemon juice and heat on HIGH power for about 30-45 seconds, or until butter melts and you can easily stir ingredients together- watch carefully so you don't overheat it and end up with a melted butter mess in your microwave.

6. After chicken has baked for the 40 minutes, pour the honey mixture all over the chicken and bake another 10 minutes, flip chicken over, bake another 10 minutes longer or until chicken is cooked all the way through and is tender.

7. Note: If you prefer your chicken"dressed," go ahead and leave the skin on.

I just wanted to mention that I cut back on the cooking time a bit... for the first part before you add the sauce I only bake the chicken for about 20 minutes and then I add the sauce and cook for about another 15 minutes and then I flip the chicken and cook for about another 10 minutes....

Crock-pot Sweet and Sour Pork

@ 1 pound stew pork

1 tablespoon cooking oil

1 can (15 ounces) pineapple tidbits (drain pineapple, reserving the juice)

1/2 cup chopped green bell pepper

1/2 cup water

1/3 cup brown sugar

2 tablespoons ketchup

1 tablespoon quick-cooking tapioca **

3 teaspoons soy sauce

1/2 teaspoon dry mustard

In a skillet brown stew pork in hot oil. Drain fat and then transfer pork to the crock-pot. In a bowl combine pineapple juice, green pepper, water, brown sugar, ketchup, tapioca, soy sauce and dry mustard. Pour over pork in the crock-pot. cover and cook for about 8 to 10 hours on low or on high for about 4 to 5 hours. About halfway through cooking time add as much of the pineapple tidbits as you desire (you could add them at the beginning too but I like to add them halfway through) Serve over rice.

** i don't usually have tapioca so I use cornstarch instead... about halfway through the cooking time I will mix about 2 tablespoons of cornstarch with a bit of cold water and then mix it into the pork mixture...
