Amera what do you usually do with asparagus?

Our Thanksgiving menu is pretty simple and I don't really have any recipes to share.

PS. I STILL haven't gotten my recipe for pumpkin tarts back. They are pretty much the basic pumpkin pie recipe inside of a mini tart pan though.

Bourbon Pecan Pie... Yummy! Too bad I don't consume alchohol anymore, but it's much better than the regular stuff :P

Just take a bowl of Bourbon or Whisky and soak the pecans for 1 hour (turning 1/2 way through) and use in your favorite pecan pie recepie. I used to just kinda tip the bowl when adding the pecans so that alot of the alchohol got in there for extra flavoring ;)

Ususally with asparagus I really trim down the stems because I think they are way too woody often, and then cook them in boiling water. I've put cheese on them which is good or added them as a mushroom/asparagus risotto. Alternately I've wrapped them in pieces of crescent rolls and baked for a veggie piglet in a blankey!

I am here, by High Command of her Royal Highness Queen Amera, whose keyboard I am not fit to dust, and whose phone cord I am not fit to untangle. Alas, I have but one exciting dish to share, may it go straight to the hips of all who endeavor to consume it.

Dump Cake

1 box dry yellow cake mix

1 large can of cherry pie filling

1 can of pineapple chunks (choose size according to your love of pineapples)

1 stick of butter

Any size cake pan, but preferrably a shallow one

Preheat oven to 350. Take a dump! Empty canned fruit directly into pan, without draining. Cover with dry cake mix. Slice butter pats over top of cake mix. Note that if you use a deep pan, you may want to tuck a couple of pats in the dry cake mix to make sure it gets moistened all the way through during cooking. Bake at 350 until bubbly and golden. Serves about 6-8 normal people or one very hungry pregnant woman.

i loooove asparagus. i usually just steam it and serve it plain because it has so much flavor. also roasting it like the brussels sprouts is really good. or grilling it!

Ooooo we do a Kahlua pecan pie which i LOVE.

Our Thanksgiving is pretty traditional. We have the turkey (actually we get two... we're having 31 people at my parents house this year), mashed potatoes, squash, green beans, the white bread stuffing, etc etc. This year my mom is doing a sweet potato gratin because no one ever ever eats the yams... every year she burns the marshmallows. We have tons of different kinds of cranberry sauce. One of my favorite sides that we do is corn soufflé, but i don't have the recipe here at work with me. I'll have to post it later.. my aunt always makes two, one for Thanksgiving and one for me to take home :) I'm always responsible for the rolls (from the Joy of Cooking), the baked brie with brown sugar and pecans for an appetizer, and the pumpkin pie. No one ever eats my pumpkin pie because my cousin makes a pumpkin chiffon pie, so i'm trying to find a better recipe if anyone has one.... so far this is winning:

Alton Brown's Green Bean Casserole

For the topping:

2 medium onions, thinly sliced

1/4 cup all-purpose flour

2 tablespoons panko bread crumbs

1 teaspoon kosher salt

Nonstick cooking spray

For beans and sauce:

2 tablespoons plus 1 teaspoon kosher salt, divided

1 pound fresh green beans, rinsed, trimmed and halved

2 tablespoons unsalted butter

12 ounces mushrooms, trimmed and cut into 1/2-inch pieces

1/2 teaspoon freshly ground black pepper

2 cloves garlic, minced

1/4 teaspoon freshly ground nutmeg

2 tablespoons all-purpose flour

1 cup chicken broth

1 cup half-and-half

Preheat the oven to 475 degrees F.

Combine the onions, flour, panko and salt in a large mixing bowl and toss to combine. Coat a sheet pan with nonstick cooking spray and evenly spread the onions on the pan. Place the pan on the middle rack of the oven and bake until golden brown, approximately 30 minutes. Toss the onions 2 to 3 times during cooking. Once done, remove from the oven and set aside until ready to use. Turn the oven down to 400 degrees F.

While the onions are cooking, prepare the beans. Bring a gallon of water and 2 tablespoons of salt to a boil in an 8-quart saucepan. Add the beans and blanch for 5 minutes. Drain in a colander and immediately plunge the beans into a large bowl of ice water to stop the cooking. Drain and set aside.

Melt the butter in a 12-inch cast iron skillet set over medium-high heat. Add the mushrooms, 1 teaspoon salt and pepper and cook, stirring occasionally, until the mushrooms begin to give up some of their liquid, approximately 4 to 5 minutes. Add the garlic and nutmeg and continue to cook for another 1 to 2 minutes. Sprinkle the flour over the mixture and stir to combine. Cook for 1 minute. Add the broth and simmer for 1 minute. Decrease the heat to medium-low and add the half-and-half. Cook until the mixture thickens, stirring occasionally, approximately 6 to 8 minutes.

Remove from the heat and stir in 1/4 of the onions and all of the green beans. Top with the remaining onions. Place into the oven and bake until bubbly, approximately 15 minutes. Remove and serve immediately.

I would much rather talk about Thanksgiving than actually do work...

Here is my recipe for the brie:

Baked Brien with Pecans

Brie, one wedge (if you use a wheel for a larger crowd, adjust the other ingredients a bit)

2 handfulls of pecans, some broken up some whole

About 1/4 cup Brown sugar

1/3 to 1/2 cup Maple syrup

1 box plain table water crackers

Place brie in an ovenproof dish. Put whole pecans on top of brie wedge, then break up the rest and sprinkle in the dish. Preheat oven to 300 degrees F. Pour maple syrup over brie and place in oven. Bake for 30 minutes or until brie has completely melted and is bubbling. Serve hot, spooned onto plain table water crackers.

This is really a recipe you can eyeball and adjust to your taste... I usually add more brown sugar cause I like it sweeter.

I haven't been around much lately, but enjoying this thread. Here's what I'm bringing:

Artichoke & Green Bean Casserole

serves ~16

4 cans french cut green beans, drained

2 -14 oz can's artichoke hearts, drained & chopped

1/4 C olive oil,

1 C mixed Romano/Parmesan cheese.

2 C Italian bread crumbs

garlic powder to taste

Combine & bake in a greased 10x13 dish for about 40 min @ 350.

*and* I'll be making a Carrot/Apple Pie w/ Ginger spice. It's yummy & not your usual apple pie.

One of my dishes that I am bringing for Thanksgiving feast is Cheesecake sopapillas

2 cans of Pillsbury Crescent dinner rolls

2 pkgs cream cheese

1 cup sugar

1 tsp vanilla

1/2 cup butter or margarine melted

1/2 cup cinammon/sugar blend about 1 TBSP cinammon to 1/2 cup sugar - more or less as you like.

Using a 9 x 13 baking pan, unroll one package of refrigerated crescent rolls and line the bottom of the pan.

Flatten.

Mix together the cream cheese (softened), sugar and extract.

Spread over the crescent rolls.

Unroll the other can of crescent rolls and place on top of cream cheese mixture.

Pour one stick of melted butter or margarine over the top and sprinkle with about 1/2 cup of the cinnamon sugar mixture.

Bake at 350 degrees for 30 minutes.

This is so easy and melts in your mouth delicious.

This is a recipe for my favorite appetizers. They are easy to make and very yummy. Make plenty cause they will go quickly.

RASPBERRY-BRIE TARTLETS

MAKES 5 DOZEN

PREP: 1 HR., BAKE: 17 MIN.

20 white bread slices

Melted butter

1 (8-ounce) wedge Brie, cut up

1 (13-ounce) jar raspberry jam

REMOVE crusts from bread with a serrated knife. Roll and flatten each bread slice with a rolling pin. Cut 3 circles out of each bread slice with a 1 ¾-inch fluted or round cookie cutter.

BRUSH mini muffin pans with melted butter. Press bread circles on bottom and up sides of muffin cups; brush bread cups with melted butter.

BAKE at 350° for 7 minutes or until lightly toasted.

REMOVE bread cups from muffin pans, and place on ungreased baking sheets. Fill cups evenly with cheese pieces; top each with ¼ teaspoon jam.

BAKE at 300° for 10 minutes or until cheese is melted.

NOTE: To make ahead, freeze toasted bread shells up to 1 month in advance. Thaw at room temperature about 30 minutes. Assemble tartlets, and bake as directed.
