This is my recipe for pumpkin bread...it sells like crazy at the bakery. It makes 2 very large 9x5 loaves

4 cups sugar

1.5 cups veg or canola oil

6 eggs

1 28oz can pumpkin puree

1/2 Tbsp salt

1/2 Tbsp ground cinnamon

1/2 Tbsp ground cloves

1/2 Tbsp ground nutmeg

1/2 Tbsp baking soda

1/2 Tbsp baking powder

4 3/4 cup AP flour

mix together sugar, oil, eggs & pumpkin

add in salt, cinnamon, cloves, nutmeg, baking soda & powder

mix in AP flour 1 cup at a time and make sure to get rid of all the flour lumps

bake at 375 for 1hr 15 mins if using the 9x5 pans

if you use a smaller pan it will be 45mins to 1hr

Here is some of the fastest, easiest 'comfort food' you can make - and it tastes even better as left overs!

Tomatoes, Hamburg Steak and Macaroni

Ingredients:

1 lb ground beef

1 large tin of whole tomatoes

1 small box of macaroni

1 large onion, diced

Directions:

Brown beef and onion in frying pan until beef is brown and onion is soft

Add tin of tomatoes to beef and onion mixture and let simmer

Cook macaroni according to directions on box

Drain macaroni in strainer

Return macaroni to pot and add tomato and ground beef mixture

Stir together and serve - salt to taste (I don't use salt cooking)

I like to cook but am not really good at it. I use my crockpot a lot. I made pot roast the other day, just buy a small pot roast (it's just me right now) season, use 2 brown gravy packets which is basically two cups of water, set the crockpot on low, go to to work, come home to a nice smelling house and a falling apart roast.

Here's my fave Guacamole Receipe:

2-3 Ripe Avacados

1 8oz package of Philly Cream Cheese

1/2 cup of Mayo

1/2 cup of regular cheese

1 small white onion, cut up however you like onion

2-3 roma tomatoes cut up in good size chunks

Lawry's and Garlic Salt to taste

Set the cream cheese out about an hour before you are going to make it, it softens it up and easier to mix. Remove pits from avacado and spoon it out of the skin. I use a fork to mash it up. Cut cream cheese into about 8 squares and add a couple at a time into the mix. Mash them up with the avacado. Fold mayo into the mix. Add the regular cheese (I like colby jack or cheddar) onions and tomatoes. Season with Lawry's and Garlic to taste. It's pretty versatile and you can add whatever you want to it. Tostito's Dippers work really well with it. I also use it in Chicken Tacos.

OMG! This recipe sounds divine. I can already smell the spices. I love baking and would someday love to open my own bakery/dessert shop. I'm going to use this recipe for Christmas presents this year. Thanks a lot!

Fritos or tortilla chips

Salsa or taco sauce of your choice

Brown the meat in a frying pan and drain the grease, or prepare meat substitute according to directions. Mix with tomato paste and add one can of water. Add taco seasoning and mix well, simmer until water evaporates. Serve over Fritos or tortilla chips, add cheese, lettuce, tomato, sour cream and salsa.

You're welcome! I sell sooooo much of it at my bakery/cafe that I'm tired of making it. Everyone ordered tons of it for Thanksgiving and now I'm paying the price trying to bake all of it! I will think of some of my other recipes that are easy to make and post them on here too.

I LOVE taco salad. I make a wilted salad to put on top of mine. Dice tomato, thin slice onion & julienne some lettuce...put lots of salt & pepper over it and mix well. Let sit in the fridge for 2-3hrs before eating the tacos. YUMYUM

The timeline... (Frankfurt) for the kids visas

10/22/2007 Filed I-130 x 2 in person + paid 710 USD (355 each )

10/22/2007 Filed DS-230 part 1 x 2

10/22/2007 Received the document checklist and FRN (case) numbers

12/18/2007 I-130 petition approved, but I didn't know. I was away at the time, didn't get confirmation letters til I got back from the states.

12/20/2007 Notice of Approval arrives in tha mail. According to the date received stamp on back of envelope at my post box.

Will now wait til hubby is back from Iraq to fax in checklist readiness, even though, I have been ready since day of lodging I-130's. all except medical.

02/18/2008 Faxed the "checklist" back to the consulate.

02/25/2008 Medicals completed.

02/25/2008 Appt letters in mail for appt on March 7th. Cant go due to prior military commitments. Emailed consulate and received an amended appt date of March 12th 2008.

03/12/2008 Visa interview - APPROVED x 2

03/27/2008 Visa's finally generated. I emailed the consulate. they apologised for the delay. They forgot to issue the visas after approval.

03/31/2008 Received visas

04/26/2008 Flying out of Frankfurt to next duty station on orders.
