get 2 pieces of bread, cut a circle in the middle of both, put one on top of the other like a sandwich, put them in the pan, brown them a little then drop an egg in the hole, cook until done, and there it is!

Lasgana:

1 box of lasagna noodles

1 jar of spaghetti sauce (any flavor)

1 pound of ground beef

1 large container of ricotta cheese

1 pkg (about 2 cups) of shredded mozerella or mixed Italian cheeses

Garlic Salt and dry parsely to taste

Boil 12 of the noodles and brown the hamburger meat. Drain the meat and mix with the spaghetti sauce. Mix the ricotta and shredded cheeses and spices to taste (dont over season, this is just to give the cheese a little flavor). Leave a handful of shredded cheese aside for the final topping. Lay three cooked noodles in the bottom of a traditional cake pan. Cover with half the cheese mixture. Layer 3 more noodles and cover with half the sauce mixture. Repeat 3 more noodles, remainder of cheese mixture, 3 more noodles, and the remainder of the sauce. Make sure the noodles are evenly covered so they dont get burned and sprinkle with the last of the shredded cheese. Bake at 375 for 30-45 minutes or until you get a nice golden brown top.

You can also use these same ingredients for manicotti. Boil manicotti pasta tubes until they just begin to soften, you dont want them so floppy you cant handle them without breaking. Load the cheese mixture into a ziploc bag or paper cone and fill each pasta tube. Arrange the filled tubes in a single layer in a traditional cake pan and cover with meat/sauce mixture. Sprinkle with remaining shredded cheese and bake at 375 for 30-45 minutes.

This is the best meatloaf ever:

2 pounds ground beef

1 roll Jimmy Dean sausage- regular. (a must!)

1 chopped onion

1 chopped green pepper

1-1 1/4 cups rolled oats

1 1/2 to 2 tbs minced garlic (optional)

3 eggs

salt/pepper or favorite seasonings to taste.

mix all ingredients together and bake in a large pan or 2 smaller ones, at 350 for about 2 hours.

I add lots of spices when I make it- creole seasoning, garlic powder, onion powder, chili flakes, chili powder, cayenne, Worcestershire sauce, Tabasco sauce. And I top it with lots of ketchup before I bake it.

brigadeiro

1 can sweetened condensed milk

2 tbsp nesquik (or similiar chocolate powder)

1 tbsp butter (or margarine)

1 package of chocolate sprinkles

- mix the first 3 of them in a saucepan (medium-low heat) and stir NON-STOP for like 10 min or until it tickens enough so you can see the bottom of the saucepan.

- Now if you're feeling lazy put in a plate, let it cool off for a bit, grab a spoon and eat it.

- If you go for the real brazilian brigadeiro, let it cool off for a few min so you can handle it, grease your hands with butter (or margarine), take a spoonfull of it and roll into small balls

- put chocolate sprinkles in a bowl and roll the balls in the chocolate sprinkles

- place balls in small paper cases it'll look like this:

Anyway, here's my mother-in-law's scalloped potatoes recipe.

Sour cream scalloped potatoes

2lbs frozen hash brown potatoes (shape isn't important)

1 pint sour cream

1 can cream of celery soup

1 can cheese soup

1 cup milk

1 medium onion, chopped

1 tsp salt

Pepper to taste on top

Put everything in a 9x13 pan and bake on 350 degrees for 1 hour and 15 minutes.

Mmm! =D
